A demi-chef for a master chef

I've started working on the chef knife for Johan Segers, and decided to document the process.

I delivered the knife wednesday. We talked for 2 and a half hour about knives, cooking, and life.
Couldn't be happier.

What kind of scale material did you use?

 

[Bruno]

This was made in O2 steel. He specifically requested to use 'real steel' like they used to use before stainless. He understands the care required. One benefit of O2 other than the heat treatment is that there is a bit of chromium in it. Definitely not a lot. But enough that it doesn't flash-rust from a bit of moisture. So it will develop a patina, but gracefully.

That is intereting bu in the pictures I cannot see the handle. What did you use there?

Ebony wood. It's what his other user knife had and it polishes up really nice!
