Hot sauce

I've always liked my food a bit on the spicy side. However, last year I have been eating hotter and hotter. I have mostly quit drinking alcohol, and I used to savour the cask strenght stuff, and the burning sensation was part of that.

I think I have just replaced one kind of burning for another, and so these days I use hot sauce very often, and I keep escalating in how hot I buy them. One particular reason for hot sauce is that I am the only one here who eats hot, so most of the time we make normal dishes, and I use hot sauce to spice things up.

I have several open bottles piri piri, grim reaper 'wraith' hot sauce, and various jars of curry paste. And there's a couple of dried carolina reapers waiting to be turned into marinating oil :)

I don't think you use tobacco either but that kills your taste buds also.

I like things hot tasting and when people say that sauce is to hot I just say you don't need to use it like ketchup.

Horseradish is a fun hot that I like because you taste it but it doesn't linger like some of the peppers.

Since more or less quitting alcohol, my sense of taste has gotten a lot more depth.
I still drink very occasionally, but few, and far between.

2 24 oz jars of sambal oelek. Perfect for hot peanut butter sauce.

You need more than just the spiciness. Sambal oelek is salty, has prawn paste garlic and other stuff that is just heaven when combined with peanut butter.

The brand on my kitchen table doesn't have prawn paste etc. in it.

At the bottom of the label it has a warning that it may contain garlic

I like hot but I also like flavor. my go to sauce is Crystal Louisiana hot sauce. you can keep adding to up the hot, but the flavor is great. Don't care for the viciously hot sauces that once you taste them, hot is all they are. one dimension.

Jup. That is why I have several. And indeed I like it when they are hot, but not mouth scalding hot. I can always add more to add more heat, but I want the other stuff to be in there as well to add different tastes to it. Pure habanero or ghost pepper just for the sake of it is not very tasty.

@Bruno , look for Thai Chili paste, you can buy in the store , then once you decide you like it, you can make it at home even hotter, so you have to plug your nose just to eat it :D

Time to start updating. Bravado hot sauce. This one is medium hot. Not a big fan of the acidity. Not great on spaghetti or eggs but surprisingly good in chicken soup. It works with the chicken flavour and enhances it. 10000 scoville give or take

My sister gave Corie and I a subscription to a hot sauce of the month club. It has been a great way to discover new and different sauces. This is the company that provides ours, but I'm sure there are others. We like it so much that we're going to sign up for a quarterly plan once we get caught up on the ones we got earlier this year.

That's a good idea I will see if there is something similar locally. I currently have several bottles open but I brought most back from Texas.
Hot sauce is an interesting phenomenon:
Let me take a hammer and purposely hit my thumb
DAMN that hurts.
Let's take a bigger hammer and try again :D

What happens when you place your thumb under the power hammer:

I LOVE hot ones!!!
Have you seen the one with Halle Berry? For some reason they took it off of youtube but its still online on their webpage.
She just nails everything without even breaking a sweat.

I would love to try those 10 wings in rising order. It would be epic.

There are many good episodes. The painful setting strips away the veneer of pretense. I also liked the one with Billie Eilish

This is heavier stuff although it can still be used in reasonable quantities. Half a teaspoon in a plate of spaghetti gives it fires but also a nice peppery garlicky flavor. Carolina reaper and ghost pepper inside.

Interesting observation i heard on hot ones: have you noticed when people label food, they choose words and pictures that exude comfort and happiness.

But when it comes to hot sauce, you get names like liquid pain, Satan's blood, mad dog 357, eternal hellfire, instant agony... with the pictures to match
